Drizzle with the remaining 1 tbsp of olive oil, 0.5 tsp of salt, and 0.25 tsp of black pepper.

Preheat oven to 200°C (400°F).

Wash and halve the baby potatoes. If using larger potatoes, cut them into 2.5 cm (1 inch) cubes.

Peel and lightly smash the garlic cloves. Strip the leaves from the rosemary and thyme sprigs.

In a large bowl, combine the chicken thighs, potatoes, smashed garlic, rosemary, and thyme. Drizzle with 2 tbsp of olive oil, 1 tsp of salt, and 0.5 tsp of black pepper. Toss to coat evenly.
