1 medium onion
1 large bell pepper
2 stalks celery stalk
4 cloves garlic
2 tbsp chili powder
1 tbsp ground cumin
1 tsp smoked paprika
0.25 tsp cayenne pepper
28 oz diced tomatoes
15 oz kidney beans
15 oz black beans
15 oz corn kernels
4 cups vegetable broth
1 tsp salt
0.5 tsp black pepper

Instructions

    Dice the onion, bell pepper, and celery stalk. Mince the garlic.

    Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion, bell pepper, and celery. Cook until softened, about 5-7 minutes.

    Add the minced garlic, chili powder, ground cumin, smoked paprika, and cayenne pepper. Cook for 1 minute until fragrant, stirring constantly.
