Ingredients

2 tbsp olive oil
1 piece onion
1 piece bell pepper
3 cloves garlic
2 tbsp chili powder
1 tbsp cumin
1 tsp smoked paprika
1 tsp oregano
28 oz diced tomatoes
15 oz kidney beans
15 oz black beans
15 oz corn
2 cups vegetable broth
1 tsp salt
0.5 tsp black pepper

Instructions

Heat 2 tbsp of olive oil in a large pot or Dutch oven over medium heat.

Add diced 1 piece and 1 piece of bell pepper. Cook until softened, about 7 minutes.

Add minced 3 cloves of garlic and cook until fragrant, about 1 minute.

Stir in 2 tbsp of chili powder, 1 tbsp of cumin, 1 tsp of smoked paprika, and 1 tsp of oregano. Cook for 1 minute.

Pour in 28 oz of diced tomatoes (undrained), 15 oz of kidney beans (rinsed and drained), 15 oz of black beans (rinsed and drained), 15 oz of corn, and 2 cups of vegetable broth.

Bring to a boil, then reduce heat and simmer for at least 20 minutes, stirring occasionally.

Season with 1 tsp of salt and 0.5 tsp of black pepper to taste.
