Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs for about 4-5 minutes per side until golden brown. Remove chicken from skillet and set aside.

Add the sliced onion and chopped apples to the same skillet. Cook, stirring occasionally, until softened and lightly browned, about 5-7 minutes.

Pour in the apple cider and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
