0.75 lbs pork tenderloin
3 tbsp fresh ginger
0.75 cup scallions
8 oz udon noodles
4 tbsp soy sauce
1.5 tbsp sesame oil
1.5 tbsp rice vinegar
0.75 tsp sugar
3 tbsp vegetable oil
3 cloves garlic
1 cup broccoli florets

Instructions

    Slice pork tenderloin thinly against the grain. Mince ginger and garlic. Chop scallions, separating whites from greens. Cut broccoli into bite-sized florets.

    Prepare the sauce: In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, sugar, and minced ginger.

    Cook udon noodles according to package directions. Drain and rinse with cold water.

    Heat 1.5 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add pork and stir-fry until cooked through, about 5-7 minutes. Remove pork from wok and set aside.

    Add the remaining 1.5 tbsp vegetable oil to the wok. Add garlic, white parts of scallions, and broccoli florets. Stir-fry for 3-5 minutes until vegetables are tender-crisp.

    Return the cooked pork to the wok. Pour the prepared sauce over the ingredients. Add the cooked udon noodles. Toss everything together until well combined and heated through, about 2-3 minutes.
