
Slow Cooker Cowboy Casserole
A hearty and comforting casserole made in the slow cooker, featuring ground beef, beans, corn, and a savory tomato sauce, topped with cheese.

Brown the ground beef in a skillet over medium-high heat. Drain excess fat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.

Transfer the browned beef and onion mixture to a slow cooker.

Add the diced tomatoes (undrained), rinsed and drained kidney beans, and corn to the slow cooker.

Stir in the beef broth, chili powder, cumin, salt, and black pepper.

Cover and cook on low for 6-8 hours or on high for 3-4 hours, until heated through and flavors have melded.
