Instructions
- 1
In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, Dijon mustard, Worcestershire sauce, minced garlic, red pepper flakes, salt, and black pepper. Reserve 1 tablespoon of this mixture for the dressing.
- 2
Place chicken breasts in a bowl or resealable bag. Pour the remaining marinade over the chicken, ensuring it's evenly coated. Marinate for at least 15 minutes, or up to 1 hour in the refrigerator.
- 3
Preheat grill to medium-high heat. Grill chicken for 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F.
- 4
While the chicken is grilling, prepare the Caesar dressing. In a medium bowl, whisk together the reserved marinade mixture, mayonnaise, minced garlic, anchovy paste, and half of the Parmesan cheese.
- 5
Once cooked, remove chicken from the grill and let it rest for 5 minutes before slicing or dicing.
- 6
Separate the Romaine lettuce leaves to form cups. Fill each lettuce cup with diced grilled chicken, drizzle with Caesar dressing, and sprinkle with the remaining Parmesan cheese.
