2 lbs Yukon Gold potatoes
3 cloves garlic cloves
4 tbsp unsalted butter
0.5 cup milk
2 tbsp fresh parsley
1 tbsp fresh chives
1 tsp salt
0.5 tsp black pepper

Instructions

    Peel and quarter the potatoes.

    Place potatoes in a large pot, cover with cold water, and add 1 tsp salt. Bring to a boil and cook for 15-20 minutes, or until fork-tender.

    While potatoes are boiling, mince the garlic.

    Drain the potatoes well. Return them to the hot, empty pot over low heat for 1 minute to dry out.

    Mash the potatoes using a potato masher or ricer until smooth.

    In a small saucepan, heat the butter and milk over low heat until butter is melted and milk is warm. Do not boil.

    Add the warm milk and butter mixture to the mashed potatoes along with the minced garlic, chopped parsley, chopped chives, and 0.5 tsp black pepper.

    Stir until the potatoes are creamy and well combined. Season with additional salt and pepper to taste.
