1.5 lbs lamb shoulder
1 large onion
4 cloves garlic
1 inch fresh ginger
2 tbsp vegetable oil
2 tsp ground cumin
1.5 tsp ground coriander
1 tsp ground turmeric
0.5 tsp cayenne pepper
14.5 oz diced tomatoes
0.5 cup water
1 tsp salt
10 oz fresh spinach
0.5 cup plain yogurt

Instructions

    Cut the lamb shoulder into 1-inch cubes.

    Peel and finely chop the onion.

    Peel and mince the garlic cloves.

    Peel and grate the fresh ginger.

    Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the lamb cubes and brown on all sides. Remove lamb and set aside.

    Add the chopped onion to the pot and cook until softened, about 5-7 minutes.

    Add the minced garlic and grated ginger, and cook for another minute until fragrant.

    Stir in the ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for 30 seconds, stirring constantly.

    Return the browned lamb to the pot. Add the diced tomatoes, water, and salt. Bring to a simmer, then reduce heat to low, cover, and cook for 1 hour, or until the lamb is tender.
