
Classic French Onion Soup

Slice the yellow onions thinly.

In a large heavy-bottomed pot or Dutch oven, melt the butter with olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until deeply caramelized and tender, about 45-60 minutes. Add minced garlic during the last 5 minutes of caramelization.

Pour in the dry sherry and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 minutes.

Add the beef broth, thyme sprigs, and bay leaf. Season with salt and black pepper. Bring to a boil, then reduce heat and simmer for at least 20 minutes, allowing flavors to meld.

While the soup simmers, toast the baguette slices until lightly golden.

Remove thyme sprigs and bay leaf from the soup. Ladle the soup into oven-safe bowls. Top each bowl with a toasted baguette slice and generously sprinkle with shredded Gruyère cheese.
