
Chicken Parmesan Meatballs with Garlic Bread

Preheat oven to 400°F. Line a baking sheet with parchment paper.

In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs, egg, minced garlic, chopped parsley, oregano, salt, and pepper. Mix gently until just combined. Do not overmix.

Roll the mixture into meatballs, about 1.5 inches in diameter. Place them on the prepared baking sheet.

Bake for 15-18 minutes, or until browned and cooked through. While meatballs bake, prepare the garlic bread.

Slice the baguette in half lengthwise. In a small bowl, mix melted butter, 1 tablespoon of olive oil, and 1 minced clove of garlic. Brush this mixture evenly over the cut sides of the baguette.

Place the baguette halves, cut-side up, on a separate baking sheet. Bake alongside the meatballs for the last 8-10 minutes of their cooking time, or until golden brown and toasted.
