
Honey Mustard Chicken with Roasted Carrots

Preheat oven to 200°C (392°F). Peel and chop the carrots into 2.5 cm (1 inch) pieces.

In a large bowl, whisk together 2 tbsp olive oil, honey, Dijon mustard, whole grain mustard, apple cider vinegar, garlic powder, onion powder, 0.5 tsp salt, and 0.25 tsp black pepper.

Add the chicken breasts and carrots to the bowl with the honey mustard mixture. Toss to coat everything evenly.

Arrange the coated chicken and carrots in a single layer on a baking sheet. Drizzle with the remaining 1 tbsp olive oil and sprinkle with the remaining 0.5 tsp salt and 0.25 tsp black pepper.
