
Soft Pretzels with Sharp Cheddar Beer Cheese Dip

In a large bowl, combine the warm water and yeast. Let it sit for 5 minutes until foamy.

Add the granulated sugar and salt to the yeast mixture. Gradually add the all-purpose flour and mix until a dough forms.

Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 30 minutes.

While the dough rises, prepare the beer cheese dip. In a saucepan, combine the lager beer, heavy cream, garlic powder, and cayenne pepper. Heat over medium heat until warm but not boiling.

Gradually whisk in the shredded sharp cheddar cheese until melted and smooth. Keep warm.

Preheat oven to 400°F (200°C). In a large pot, bring 10 cups of water and the baking soda to a boil.

Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a rope about 10 inches long and twist into a pretzel shape.

Carefully drop pretzels into the boiling water mixture for 30 seconds, then remove with a slotted spoon.
