Press the tofu to remove excess water, then cut it into 1-inch cubes. In a medium bowl, toss the tofu cubes with the cornstarch and a pinch of salt until evenly coated.

In a small bowl, whisk together the tahini, soy sauce, rice vinegar, maple syrup, water, minced garlic, grated ginger, and red pepper flakes until smooth. Set aside.

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the coated tofu cubes and cook for 5-7 minutes, stirring occasionally, until golden brown and crispy on all sides. Remove the tofu from the skillet and set aside.
