1.5 cups red lentils
4 cups vegetable broth
1 medium onion
3 cloves garlic
1 inch ginger
14.5 oz diced tomatoes
0.5 cup coconut milk
1.5 tsp ground cumin
1 tsp ground coriander
0.5 tsp turmeric
0.25 tsp cayenne pepper
1 tsp salt
0.5 tsp black pepper
2 tbsp olive oil
0.25 cup fresh cilantro

Instructions

    Rinse the red lentils thoroughly under cold water.

    Finely chop the onion. Mince the garlic and grate the ginger.

    Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.

    Add the minced garlic and grated ginger to the pot and cook for another minute until fragrant.

    Stir in the ground cumin, ground coriander, turmeric, and cayenne pepper. Cook for 30 seconds, stirring constantly, until spices are fragrant.

    Add the rinsed red lentils, vegetable broth, diced tomatoes, salt, and black pepper to the pot. Stir to combine.

    Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender and have broken down. Stir occasionally to prevent sticking.

    Stir in the coconut milk and heat through for about 2-3 minutes. Do not boil after adding coconut milk.
