
Red Lentil Dal
A flavorful and aromatic Indian lentil dish, perfect served with rice.

Instructions
Rinse the 1.5 cups red lentils under cold water.
Finely chop the 1 piece onion. Mince the 3 cloves cloves of garlic and grate the 1 inch piece ginger.
Heat the 2 tbsp vegetable oil in a pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and grated ginger, and cook for 1 minute until fragrant. Stir in the turmeric, cumin, and coriander and cook for 30 seconds more.

Add the rinsed lentils, 4 cups water, and the can of 1 can (14.5 oz) tomatoes (undrained) to the pot. Bring to a boil, then reduce heat, cover, and simmer for 25 minutes, or until lentils are tender and have broken down.

Season with 1 tsp salt to taste. Stir and serve hot.
