Ingredients

1.5 lb mussels
2 tbsp olive oil
0.5 piece onion
4 cloves garlic
28 oz crushed tomatoes
0.5 cup vegetable broth
1 tsp dried oregano
0.25 tsp red pepper flakes
0.5 tsp salt
0.25 tsp black pepper
0.25 cup fresh basil

Clean the 1.5 lb mussels.

Finely dice the 0.5 piece onion and mince the 4 cloves garlic cloves.

Heat 2 tbsp olive oil in a large skillet or pot over medium heat.

Add the diced onion and cook until softened, about 5 minutes minutes.

Add the minced garlic and cook for another 1 minute minute until fragrant.

Pour in the 28 oz crushed tomatoes and 0.5 cup vegetable broth. Stir in 1 tsp oregano and 0.25 tsp red pepper flakes.

Bring the sauce to a simmer, then add the mussels. Cover and cook for 8 minutes minutes, or until the mussels have opened.

Season with 0.5 tsp salt and 0.25 tsp black pepper to taste. Stir in the fresh basil.
