
Pork and Apple Cider Stew

Cut the pork shoulder into 1.5-inch cubes. Season generously with salt and black pepper.

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the pork cubes in batches until browned on all sides. Remove pork and set aside.

Add the chopped yellow onion, carrots, and celery to the pot. Sauté until softened, about 8-10 minutes.

Add minced garlic and cook for 1 minute more until fragrant.

Sprinkle the flour over the vegetables and stir to coat. Cook for 1-2 minutes, stirring constantly.

Pour in the apple cider, scraping up any browned bits from the bottom of the pot. Bring to a simmer.

Return the seared pork to the pot. Add the Dijon mustard, thyme sprigs, and bay leaf. Stir to combine.

Bring the stew to a gentle simmer, then cover and reduce heat to low. Cook for 2 to 2.5 hours, or until the pork is very tender.
