4 salmon fillets
¼ cup honey
2 chipotle peppers in adobo sauce
1 tbsp adobo sauce
2 tbsp lime juice
3 tbsp olive oil
3 cup corn kernels
1 red bell pepper
½ red onion
1 can canned butter beans
1 jalapeno
¼ cup cilantro
1 pinch salt
1 pinch black pepper

Instructions

    Preheat oven to 400F. In a small bowl, whisk together honey, minced chipotle peppers, adobo sauce, and lime juice.

    Pat salmon fillets dry and place them on a baking sheet. Brush the salmon generously with half of the honey chipotle glaze.

    In a large bowl, toss corn kernels, diced red bell pepper, diced red onion, drained butter beans, and minced jalapeno with 2 tbsp olive oil, salt, and pepper.

    Arrange the succotash mixture around the salmon on the baking sheet. Roast for 15-20 minutes, or until salmon is cooked through and flakes easily with a fork and the vegetables are tender and slightly charred.
