2 large eggs
1 ½ cup Panko breadcrumbs
½ cup grated Parmesan cheese
1 tsp dried oregano
1 tsp dried basil
½ tsp garlic powder
1 tsp salt
½ tsp black pepper
¼ cup olive oil
2 tbsp butter
¼ cup lemon juice
2 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped

    Slice chicken breasts horizontally to create cutlets, about 1/2-inch thick. Place each cutlet between two pieces of plastic wrap and pound gently with a meat mallet or rolling pin until about 1/4-inch thick.

    Set up a dredging station: Place flour in one shallow dish. Whisk eggs in another shallow dish. In a third shallow dish, combine Panko breadcrumbs, Parmesan cheese, oregano, basil, garlic powder, salt, and pepper.
