1 tsp baking soda
1.5 tsp ground cinnamon
1 tsp ground nutmeg
0.5 tsp ground ginger
0.25 tsp salt
1 cup pumpkin puree
0.5 cup vegetable oil
2 large eggs
1 cup granulated sugar
0.5 cup packed brown sugar
1 tsp vanilla extract

Instructions

    Preheat oven to 350°F (175°C). Grease and flour a 12-cup muffin tin, or line with paper liners.

    In a large bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt.

    In a separate medium bowl, whisk together the pumpkin puree, vegetable oil, eggs, granulated sugar, packed brown sugar, and vanilla extract until well combined.

    Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.

    Divide the batter evenly among the prepared muffin cups.
