
Classic Banana Crumb Coffee Cake

Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Preheat oven to 350°F. Grease and flour a 9x13 inch baking pan.

In a large bowl, whisk together 2 cups of flour, 1 cup of granulated sugar, baking soda, salt, and 1 teaspoon of ground cinnamon. Cut in 1/4 cup of the butter until the mixture resembles coarse crumbs. Set aside.

In a separate bowl, mash the ripe bananas until smooth. Whisk in the remaining 1/2 cup granulated sugar, eggs, sour cream, and vanilla extract.

Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.

Spread half of the batter into the prepared baking pan. Sprinkle half of the crumb topping over the batter.

Spread the remaining batter over the crumb topping. Sprinkle the remaining crumb topping evenly over the top.
