3 lbs beef chuck roast
4 medium carrots
3 stalks celery stalks
1 large onion
4 cloves garlic cloves
3 cups beef broth
2 tbsp Worcestershire sauce
1 tbsp tomato paste
0.25 cup all-purpose flour
1 tbsp olive oil
1.5 tsp salt
1 tsp black pepper
2 leaves bay leaves
1 tsp dried rosemary

    Season the beef chuck roast generously with salt and black pepper.

    Heat olive oil in a skillet over medium-high heat. Sear the roast on all sides until browned. Remove roast and place in the slow cooker insert.

    Chop onion, carrots, and celery. Mince garlic. In a bowl, whisk together beef broth, Worcestershire sauce, tomato paste, flour, bay leaves, dried rosemary, and remaining salt and pepper.

    Pour the broth mixture over the roast in the slow cooker. Add the chopped vegetables around the roast.

    Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the roast is very tender.

    Remove the roast and vegetables. Shred or slice the roast. Skim any excess fat from the cooking liquid. Serve the roast and vegetables with the cooking liquid as a gravy.
