Instructions
- 1
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- 2
Slice the kielbasa into 1/2-inch thick rounds. Chop the yellow onion and bell peppers into roughly 1-inch pieces.
- 3
In a large bowl, combine the sliced kielbasa, chopped onion, and chopped bell peppers. Add the olive oil, garlic powder, paprika, salt, and black pepper. Toss everything to coat evenly.
- 4
Spread the kielbasa and vegetable mixture in a single layer onto the prepared baking sheet.
- 5
Roast for 15 minutes, then remove the baking sheet from the oven and add the pierogies, scattering them among the other ingredients. Gently toss to coat the pierogies lightly with the oil and drippings.

Return the baking sheet to the oven and roast for another 20-25 minutes, or until the pierogies are golden brown and slightly crispy, and the kielbasa is heated through and slightly browned. Stir halfway through this second roasting period.
