
Shaved Fennel and Apple Salad

Instructions
Trim the fronds and tough outer layers from the 2 piece fennel bulbs.
Halve the fennel bulbs lengthwise and core them. Shave the fennel as thinly as possible using a mandoline or a very sharp knife.
Core the 2 piece apples and slice them thinly.
In a small bowl, whisk together the juice of the 1 piece lemon, 3 tbsp olive oil, 1 tsp Dijon mustard, 1 tsp honey, 0.5 tsp salt, and 0.25 tsp black pepper.
In a large bowl, combine the shaved fennel, sliced apples, 0.5 cup walnuts, and 0.25 cup grated Parmesan cheese.
Pour the vinaigrette over the salad and toss gently to coat. Serve immediately.
