
Fluffy Buttermilk Biscuits

Preheat your oven to 425F. Lightly grease a baking sheet or line it with parchment paper.

In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar.

Cut the cold unsalted butter into small cubes. Add the butter to the dry ingredients and use a pastry blender or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces of butter remaining.

Make a well in the center of the dry ingredients and pour in the buttermilk. Stir gently with a fork until just combined. Do not overmix; the dough will be sticky.

Turn the dough out onto a lightly floured surface. Gently fold the dough over on itself a few times to create layers. Pat or gently roll the dough to about 3/4 inch thickness.

Use a biscuit cutter or a glass rim to cut out biscuits. Do not twist the cutter. Reroll scraps gently once if needed.

Place the biscuits on the prepared baking sheet, about 1 inch apart. Brush the tops with heavy cream.
