
Classic Sweet Corn Breakfast Hash

Peel and dice the potatoes into 1.5 cm (0.6 inch) cubes. Dice the onion and bell pepper into 1 cm (0.4 inch) pieces.

Heat 2 tbsp of olive oil in a large skillet over medium-high heat. Add the diced potatoes and cook for 10-12 minutes, stirring occasionally, until tender and browned.

Add the diced onion and bell pepper to the skillet with the potatoes. Cook for another 5-7 minutes until softened.

Stir in the sweet corn, paprika, salt, and black pepper. Cook for 3-5 minutes until the corn is heated through.
