
Garlic Butter Shrimp and Corn Pasta with a Twist

Cook linguine according to package directions until al dente. Reserve about 1 cup of pasta water before draining.

While pasta is cooking, melt 2 tbsp of butter in a large skillet over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.

Add the remaining 2 tbsp of butter to the same skillet. Add minced garlic and cook until fragrant, about 1 minute. Add corn kernels and cook for another 2-3 minutes.

Stir in the heavy cream and bring to a simmer. Cook for 2 minutes, stirring occasionally, until the sauce slightly thickens.

Add the drained linguine, cooked shrimp, lime juice, and chopped cilantro to the skillet. Toss to combine, adding reserved pasta water a little at a time if needed to reach desired sauce consistency.
