12 oz orzo pasta
2 pints cherry tomatoes
8 oz feta cheese
4 cloves garlic cloves
0.5 cup olive oil
1 tsp dried oregano
0.5 tsp red pepper flakes
3 cup vegetable broth
0.25 cup fresh basil
1 tsp salt
0.5 tsp black pepper

Instructions

    Preheat oven to 400°F. Place cherry tomatoes and feta cheese block in a 9x13 inch baking dish. Drizzle with 1/4 cup olive oil and season with salt, pepper, and oregano.

    Bake for 20-25 minutes, or until tomatoes burst and feta is soft.

    While baking, mince garlic. In a large bowl, combine orzo, minced garlic, remaining 1/4 cup olive oil, red pepper flakes, and salt.

    Once the feta and tomatoes are done, remove the baking dish from the oven. Mash the feta and tomatoes with a fork to create a sauce.

    Add the orzo mixture and vegetable broth to the baking dish with the feta and tomato sauce. Stir to combine.

    Cover the baking dish with foil and return to the oven. Bake for 15-20 minutes, or until orzo is al dente.
