
Quinoa Patties

Cook the quinoa. Combine quinoa and vegetable broth in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until broth is absorbed. Let stand for 5 minutes, then fluff with a fork.

Prepare the vegetables. Finely dice the onion, mince the garlic, dice the bell pepper, and shred the zucchini. Chop the parsley.

Sauté the vegetables. Heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and diced bell pepper, and cook for another 5 minutes. Add the shredded zucchini and cook until tender, about 5-7 minutes.

Combine the ingredients. In a large bowl, combine the cooked quinoa, sautéed vegetables, chopped parsley, ground cumin, ground coriander, salt, black pepper, breadcrumbs, and egg. Mix well until thoroughly combined.

Form the patties. Divide the mixture into 8 equal portions and shape them into patties, about 1/2 inch thick.

Cook the patties. Heat 1 tbsp of olive oil in a non-stick skillet over medium heat. Cook the patties for 4-5 minutes per side, until golden brown and heated through.
