Instructions
Boil the 2 lb potatoes in salted water until fork-tender, about 15 minutes minutes.

Preheat oven to 400 degrees Fahrenheit.
Drain the potatoes and let them steam dry for 5 minutes minutes.

Place the potatoes on a baking sheet lined with parchment paper. Gently smash each potato with the bottom of a glass or a fork until flattened, about 0.75 inch thick.
Drizzle the smashed potatoes with 0.25 cup olive oil. Sprinkle with 1 tsp salt, 0.5 tsp black pepper, 1 tsp garlic powder, and 1 tbsp chopped rosemary.
