1.5 lbs chicken breast
1 cup cashews
4 tbsp butter
6 cloves garlic
0.25 cup soy sauce
0.5 cup chicken broth
1 tbsp cornstarch
2 tbsp vegetable oil
1 tsp salt
0.5 tsp black pepper

Instructions

    Cut chicken breast into bite-sized pieces. Season with salt and pepper.

    Mince the garlic cloves.

    In a small bowl, whisk together soy sauce, chicken broth, and cornstarch until smooth. Set aside.

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
