1 medium cucumber
1 cup cherry tomatoes
0.5 medium red bell pepper
0.25 cup red onion
0.25 cup fresh cilantro
1 medium lime
3 tbsp olive oil
0.5 tsp salt
0.25 tsp black pepper

    Rinse quinoa thoroughly under cold water. Cook quinoa according to package directions, usually 1 part quinoa to 2 parts water, simmered for 15 minutes.

    While quinoa cooks, dice the cucumber, halve the cherry tomatoes, chop the red bell pepper, finely dice the red onion, and chop the cilantro.

    Juice the lime and whisk together the lime juice, olive oil, salt, and black pepper in a small bowl.

    Once quinoa is cooked, fluff with a fork and let it cool slightly.
