
Classic Chicken Souvlaki Bowl

Prepare the marinade: Zest and juice one lemon. Mince 2 cloves of garlic. In a bowl, whisk together lemon zest, lemon juice, minced garlic, dried oregano, 1/4 cup olive oil, 1 tsp salt, and 1/2 tsp black pepper.

Cut chicken breasts into 1-inch cubes. Add chicken to the marinade, toss to coat, and let marinate for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.

While chicken marinates, prepare the rice: Rinse rice under cold water. In a saucepan, combine rice, vegetable broth, and 1/2 tsp salt. Bring to a boil, then reduce heat, cover, and simmer for 15-18 minutes, or until liquid is absorbed.

Prepare the tzatziki sauce: Grate 1/2 cucumber and squeeze out excess water. Finely chop 2 cloves of garlic and fresh dill. In a bowl, combine plain yogurt, grated cucumber, minced garlic, chopped dill, 1/4 cup olive oil, 1/4 tsp salt, and 1/4 tsp black pepper. Stir well and refrigerate until serving.

Thread marinated chicken onto skewers. Grill over medium-high heat for 8-10 minutes, turning occasionally, until cooked through. Alternatively, broil or pan-sear until golden brown and cooked through.

While chicken is grilling, prepare the salad: Halve cherry tomatoes. Thinly slice 1/2 red onion and 1/2 cucumber. Chop kalamata olives.

Assemble the bowls: Spoon cooked rice into each bowl. Top with grilled chicken skewers, cherry tomatoes, sliced red onion, sliced cucumber, kalamata olives, and crumbled feta cheese. Drizzle generously with tzatziki sauce.
