
Classic Cajun Chicken and Rice Bowl

Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until the liquid is absorbed and the rice is tender.

While the rice is cooking, prepare the chicken. Cut the chicken breasts into 1-inch cubes. In a medium bowl, toss the chicken cubes with 1 tablespoon of olive oil, Cajun seasoning, salt, and black pepper until evenly coated.

Heat the remaining 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until browned and cooked through. Remove chicken from skillet and set aside.

Add the chopped onion, bell pepper, and celery to the same skillet. Cook over medium heat for 7-10 minutes, stirring occasionally, until softened. Add the minced garlic and cook for 1 minute more until fragrant.
