1.5 cups rolled oats
3.5 cups all-purpose flour

In a large bowl, combine 1.5 cups warm water, 2.25 tsp active dry yeast, and 2 tbsp granulated sugar. Let stand for 5 minutes until foamy.

Stir in 1.5 cups rolled oats and 3 tbsp softened butter.

Gradually add 3.5 cups all-purpose flour and 1.5 tsp salt, mixing until a soft dough forms.

Turn dough out onto a lightly floured surface and knead for 8 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour until doubled in size.

Punch down dough, shape into a loaf, and place in a greased 9 x5-inch loaf pan. Cover and let rise for 30 minutes until nearly doubled.
