1 lb boneless, skinless chicken thighs
16 oz gnocchi
2 tbsp olive oil
1 medium onion
2 medium carrots
2 medium celery stalks
3 cloves garlic
6 cup low-sodium chicken broth
1 cup heavy cream
5 oz fresh spinach
1 tsp salt
0.5 tsp black pepper
1 tsp dried thyme

Instructions

    Dice the chicken thighs into bite-sized pieces. Season with salt and pepper.

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.

    Add chopped onion, carrots, and celery to the pot. Sauté until softened, about 5-7 minutes.
