
Roasted Garlic Captures Dip

Preheat oven to 400°F. Slice off the top 1/4 inch of each garlic head to expose the cloves.

Drizzle 1 tbsp olive oil over the cut tops of the garlic. Wrap each head tightly in foil.

Roast for 40-50 minutes, or until the garlic is soft and caramelized.

Let the roasted garlic cool slightly, then squeeze the softened cloves out of their skins into a medium bowl.

Add the remaining 3 tbsp olive oil, 1 tsp salt, and 1/2 tsp black pepper to the bowl with the garlic. Mash with a fork until well combined.

Add cream cheese and sour cream to the bowl. Stir until smooth and creamy.

Stir in the fresh chives and parsley. Season with the remaining 1/2 tsp salt and 1/4 tsp black pepper, or to taste.
