1 lbs chicken breast
8 cups chicken broth
1 cup white rice
2 medium carrots
2 stalks celery stalks
1 medium onion
3 cloves garlic cloves
2 tbsp olive oil
1 tsp salt
0.5 tsp black pepper
0.25 cup parsley

Instructions

    Dice the carrots, celery, and onion. Mince the garlic.

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the diced carrots, celery, and onion and sauté until softened, about 5-7 minutes.

    Add the minced garlic and cook for another minute until fragrant.

    Pour in the chicken broth and bring to a simmer. Add the whole chicken breasts to the pot.

    Simmer for 15-20 minutes, or until the chicken is cooked through. Remove chicken breasts, shred them, and return to the pot.
