1 ½ lbs chicken thighs
1 ½ lbs sweet potatoes
1 lb Brussels sprouts
3 tbsp olive oil
3 tbsp Dijon mustard
3 tbsp maple syrup
4 cloves garlic
1 tbsp apple cider vinegar
1 ½ tsp salt
¾ tsp black pepper
1 tsp rosemary

Instructions

    Preheat oven to 400°F. Peel and cube sweet potatoes into 1-inch pieces. Trim and halve Brussels sprouts. Mince garlic.
