
Spicy Coconut Curry Lentils

Rinse the red lentils thoroughly under cold water.

Finely chop the onion, mince the garlic, and grate the ginger.

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes.

Add the minced garlic and grated ginger to the pot and cook for 1 minute until fragrant.

Stir in the curry powder, turmeric, cumin, and cayenne pepper. Cook for another minute, stirring constantly, until spices are fragrant.

Pour in the rinsed lentils, coconut milk, and vegetable broth. Add salt and black pepper. Stir to combine.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender and have absorbed most of the liquid. Stir occasionally.
