1 lb shrimp
1.5 cup couscous
1.5 cup chicken broth
3 tbsp olive oil
4 cloves garlic
1 whole lemon
0.25 cup parsley
1 tsp salt
0.5 tsp black pepper

    Prepare the couscous: In a medium saucepan, bring the chicken broth to a boil. Stir in 1 tablespoon of olive oil, 0.5 teaspoon of salt, and the couscous. Cover, remove from heat, and let stand for 5 minutes, or until the liquid is absorbed. Fluff with a fork.

    While the couscous rests, prepare the shrimp: Peel and devein the shrimp. Mince the garlic. Zest and juice the lemon. Finely chop the parsley.
