
Garlic Herb Butter Roasted Chicken

Preheat oven to 400°F.

Mince the garlic. Finely chop the rosemary and thyme. In a bowl, mix softened butter with minced garlic, chopped herbs, 1/2 tsp salt, and 1/4 tsp black pepper.

Pat the chicken dry. Loosen the skin over the breasts and thighs. Spread half the herb butter mixture under the skin. Rub the remaining butter over the outside of the chicken.

Place lemon halves inside the chicken cavity. Season the outside with 1 tsp salt and 1/2 tsp black pepper.

Place chicken on a roasting rack in a baking sheet. Roast for 70-80 minutes, or until internal temperature reaches 165°F in the thickest part of the thigh.
