4 salmon fillets
2 tbsp olive oil
1 ½ tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp dried oregano
1 tsp dried thyme
½ tsp cayenne pepper
1 tsp salt
½ tsp black pepper
1 cup quinoa
2 cup water
1 lime
1 avocado
1 cup cherry tomatoes
¼ red onion
¼ cup cilantro

    Rinse the quinoa thoroughly under cold water. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Let stand, covered, for 5 minutes, then fluff with a fork.

    While the quinoa cooks, prepare the blackened seasoning. In a small bowl, mix together paprika, garlic powder, onion powder, oregano, thyme, cayenne pepper, salt, and black pepper.

    Pat the salmon fillets dry with paper towels. Drizzle with 1 tablespoon of olive oil and rub to coat. Generously sprinkle the blackened seasoning mixture over both sides of each salmon fillet, pressing gently to adhere.

    Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering. Carefully place the salmon fillets in the skillet, skin-side down if applicable.
