1.5 lbs beef chuck
0.5 head green cabbage
1 large onion
2 medium carrots
2 medium celery stalks
4 cloves garlic
8 cups beef broth
14.5 oz diced tomatoes
2 tbsp tomato paste
2 tbsp olive oil
1 leaf bay leaf
1 tsp dried thyme
1.5 tsp salt
0.75 tsp black pepper

Instructions

    Cut beef chuck into 1-inch cubes. Season generously with salt and pepper. Chop onion, carrots, and celery. Mince garlic. Shred cabbage.

    Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes in batches, about 2-3 minutes per side. Remove beef and set aside.

    Add chopped onion, carrots, and celery to the pot. Sauté until softened, about 5-7 minutes. Add minced garlic and tomato paste, cook for 1 minute more until fragrant.

    Return the browned beef to the pot. Add beef broth, diced tomatoes, bay leaf, dried thyme, and the remaining salt and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 60 minutes, or until beef is tender.

    Add shredded cabbage to the pot. Stir well and continue to simmer, covered, for another 15-20 minutes, or until cabbage is tender. Remove bay leaf before serving.
