Finely mince the onion and garlic. Chop the fresh parsley.

In a bowl, combine ground lamb, minced onion, garlic, parsley, cumin, coriander, paprika, cayenne pepper, salt, and black pepper. Mix gently until combined.

Shape the mixture around skewers into long, cigar-like shapes. Brush lightly with olive oil.

Preheat grill to medium-high heat. Grill skewers for 8-10 minutes, turning occasionally, until cooked through and nicely charred.
