4 large russet potatoes
2 cup broccoli florets
1 ½ cup cheddar cheese
½ cup sour cream
4 tbsp butter
2 tbsp milk
1 tsp Dijon mustard
1 tsp salt
½ tsp black pepper
1 tbsp olive oil

Instructions

    Preheat your oven to 400°F (200°C). Scrub the potatoes clean and prick them all over with a fork. Rub them with olive oil and a pinch of salt.

    Bake the potatoes directly on the oven rack for 50-60 minutes, or until tender when pierced with a fork.

    While the potatoes are baking, steam or boil the broccoli florets until tender. Drain well and roughly chop.

    Once the potatoes are tender, remove them from the oven. Let them cool slightly, then slice each potato in half lengthwise. Carefully scoop out most of the flesh into a large mixing bowl, leaving about a 1/4-inch border around the skin.

    Add the scooped potato flesh to the mixing bowl along with the sour cream, butter, milk, Dijon mustard, salt, and pepper. Mash everything together until well combined. Stir in the chopped broccoli and half of the cheddar cheese.

    Spoon the broccoli and cheese mixture back into the potato skins. Top with the remaining cheddar cheese.

    Return the stuffed potatoes to the oven and bake for another 15-20 minutes, or until the cheese is melted and bubbly and the tops are lightly golden.
