Pat the flank steak dry with paper towels. Season generously on both sides with kosher salt and black pepper.

Prepare the chimichurri: In a food processor, combine parsley, cilantro, garlic, red wine vinegar, oregano, and red pepper flakes. Pulse until finely chopped.

While the food processor is running, slowly drizzle in the olive oil until the chimichurri is well combined and has a slightly emulsified consistency. Stir in the juice of half a lime. Taste and adjust seasoning if needed.
