Instructions

  1. 1

Pat the flank steak dry with paper towels. Season generously on both sides with kosher salt and black pepper.

  2. 2

Prepare the chimichurri: In a food processor, combine parsley, cilantro, garlic, red wine vinegar, oregano, and red pepper flakes. Pulse until finely chopped.

  3. 3

While the food processor is running, slowly drizzle in the olive oil until the chimichurri is well combined and has a slightly emulsified consistency. Stir in the juice of half a lime. Taste and adjust seasoning if needed.

  4. 4

Preheat your grill to medium-high heat. Lightly oil the grill grates.

  5. 5

Grill the flank steak for 4-6 minutes per side for medium-rare, or to your desired level of doneness.

  6. 6

Remove the steak from the grill and let it rest on a cutting board for at least 5-10 minutes before slicing against the grain.

  7. 7

Serve the sliced flank steak topped generously with the prepared chimichurri. Squeeze the remaining half lime over the top if desired.
