
Lemony Garlic Chicken & Broccoli Pasta

Cook pasta according to package directions until al dente. Reserve about 1 cup of pasta water before draining.

While pasta cooks, cut chicken breast into 1-inch cubes. Mince garlic. Zest one lemon and juice both lemons. Steam or blanch broccoli florets until tender-crisp, about 5 minutes.

Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add chicken cubes, 1 tsp salt, and 0.5 tsp black pepper. Cook until browned and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.

Add remaining 2 tbsp olive oil to the skillet. Add minced garlic and lemon zest. Sauté for about 30 seconds until fragrant. Stir in lemon juice and dried oregano.

Return chicken to the skillet. Add the drained pasta and blanched broccoli. Toss to combine. Add reserved pasta water, a little at a time, to create a light sauce that coats the pasta and chicken.
