1.5 lbs chicken breast
2 tbsp chipotle peppers in adobo sauce
2 tbsp lime juice
1 tbsp olive oil
1 tsp cumin
1 tsp garlic powder
0.5 tsp salt
0.25 tsp black pepper
2 cups white rice
4 cups water
1.5 cups black beans
1 cup corn
0.5 cup red onion
0.25 cup cilantro
1 medium avocado
0.5 cup sour cream
1 medium lime

    Cook rice according to package directions.

    Dice chicken breast into bite-sized pieces. In a bowl, combine diced chicken, chopped chipotle peppers in adobo sauce, lime juice, olive oil, cumin, garlic powder, salt, and black pepper. Marinate for at least 15 minutes.
