1 ½ lbs boneless skinless chicken breast
2 tbsp olive oil
1 large yellow onion
2 stalks celery
2 medium carrots
4 cloves garlic cloves
1 tsp dried rosemary
6 cups chicken broth
2 cans cannellini beans
1 tsp salt
½ tsp black pepper

Instructions

    Chop the onion, celery, and carrots. Mince the garlic. Cut chicken breast into bite-sized pieces.

    Heat olive oil in a Dutch oven over medium-high heat. Season chicken pieces with salt and pepper. Add chicken to the pot and cook until lightly browned on all sides, about 5 minutes. Remove chicken and set aside.

    Add the chopped onion, celery, and carrots to the pot. Sauté until softened, about 6-8 minutes.

    Stir in the minced garlic and dried rosemary. Cook for 1 minute until fragrant.

    Pour in the chicken broth, scraping up any browned bits from the bottom of the pot. Return the chicken to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until chicken is tender and cooked through.

    Stir in the rinsed and drained cannellini beans. Season with remaining salt and pepper to taste. Simmer uncovered for an additional 5-10 minutes to thicken slightly.
