
Mediterranean Eggplant Pita with Yogurt Sauce

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Slice eggplants into 1/2-inch thick rounds. In a large bowl, toss eggplant slices with 3 tbsp olive oil, minced garlic, cumin, paprika, 1/2 tsp salt, and black pepper until evenly coated.

Arrange eggplant slices in a single layer on the prepared baking sheet. Roast for 20-25 minutes, flipping halfway through, until tender and lightly browned.

While the eggplant roasts, prepare the yogurt sauce. In a small bowl, combine plain yogurt, 1 tbsp olive oil, lemon juice, chopped fresh mint, chopped fresh parsley, the remaining 1/2 tsp salt, and a pinch of black pepper. Stir well.

Warm the pita bread slightly (in the oven for the last few minutes of eggplant roasting, or in a skillet).
